Ingredients:

For Marinade and Salmon:

  • 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes, drained
  • 1/4 Cup Extra Virgin Olive Oil
  • 4 cloves Garlic, minced
  • 1/2 tsp. Red Pepper Flakes
  • 4 Tbsp. Furikake
  • 1/4 tsp. Black Pepper
  • 2 tsp. Soy Sauce
  • 2 tsp. Oyster Sauce
  • 1 Tbsp. Hoisin Sauce
  • 1 Tbsp. Rice Vinegar
  • 2 lbs. Salmon, cubed

For Sushi Rice:

  • 2 Cups White Rice, cooked
  • 1 tsp. Sea Salt
  • 2 Tbsp. Granulated Sugar
  • 1/4 Cup Seasoned Rice Vinegar
  • 1 tsp. Sesame Oil
  • 2 Tbsp. Furikake

For Salmon Sushi Bake:

  • Nori Seaweed Sheets
  • Cucumber, sliced
  • Green Onion, sliced
  • Avocado, diced
  • Japanese Mayo, to taste
  • Eel Sauce, to taste
  • Nonstick Cooking Spray, as neededd

Instructions:

  • Preheat oven to 400 F.
  • Combine all of the marinade ingredients in a medium bowl. Place in your salmon cubes, or other fish of choice and allow to marinate for 30 minutes.
  • While the salmon is marinating, mix together the cooked rice with salt, sugar, rice vinegar, sesame oil, and furikake.
  • Spray your baking dish with nonstick cooking spray. Press cooked rice down on the greased baking dish. This works best when your hands are slightly wet to avoid the rice sticking to your hands.
  • Once the rice is pressed flat in the baking dish, begin adding the salmon to your sushi bake.
  • Evenly spread out the salmon and marinade mixture until the rice is covered. Make sure to add all the marinade to the baking dish to maximize this dish's flavor!
  • Bake in the preheated oven for 15 minutes.
  • Once cooked, top your salmon sushi bake with cucumber slices, sliced green onion, and diced avocado.
  • Cut into squares and serve on top of nori seaweed with a drizzle of Japanese mayo and eel sauce.

Don't feel like salmon tonight?  Try this recipe with some pre-cooked chicken thighs instead for a tasty American sushi.
