Chef's Tip:

How do you make baked feta spaghetti squash?
To make baked feta spaghetti squash, halve a spaghetti squash lengthwise and scoop out the seeds. Place the squash cut-side up on a baking sheet, insert a block of feta cheese and canned diced tomatoes into the centers, and season with olive oil, garlic, salt, and pepper. Bake at 400°F (200°C) for 45–50 minutes, then scrape the squash into tender strands and toss everything together in a bowl until coated.
Can you make baked feta pasta with canned tomatoes instead of cherry tomatoes?
Yes, using quality canned diced tomatoes (such as Dei Fratelli Diced Tomatoes) works fantastically as a convenient, flavorful alternative to fresh cherry or grape tomatoes. Canned tomatoes release rich juices while baking, creating an even creamier, cohesive sauce when mixed into the baked feta and squash strands.
How do you soften spaghetti squash to make it easier to cut?
To safely cut a raw spaghetti squash, pierce the outer skin a few times with a knife or fork and microwave the whole squash for 2 to 3 minutes. This lightly softens the tough outer skin, allowing your knife to slice cleanly lengthwise without slipping.
Is baked feta spaghetti squash low-carb and gluten-free?
Yes, swapping traditional wheat pasta for tender spaghetti squash strands naturally makes this dish gluten-free and low-carb. It provides the rich, comforting texture of a baked pasta dish while adding extra nutrients and fiber.
