Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes
  • 1 large Spaghetti Squash
  • 1 (8 oz.) block Feta Cheese
  • 4 Tbsp. Extra Virgin Olive Oil
  • 2 cloves Garlic, minced
  • 1 tsp. Sea Salt
  • 0.5 tsp. Black Pepper

Instructions:

  • Preheat oven to 400 F.
  • Line a baking sheet with parchment paper.
  • Cut spaghetti squash in half, lengthwise and scoop out the seeds.
  • Discard seeds and place spaghetti squash, cut side up, on the prepared baking sheet.
  • Break the block of feta cheese in half. Place each half into each of the spaghetti squash halves.
  • Add Dei Fratelli Petite Diced Tomatoes inside the squash halves and drizzle with olive oil. Season with garlic, salt, and pepper.
  • Bake the spaghetti squash for 45-50 minutes, or until the cheese is melty and the squash is golden brown on the edges.
  • Using a fork, begin pulling the spaghetti squash apart while also removing the cheese and tomato mixture into a bowl.
  • Mix the feta cheese and tomato mixture with the squash noodles, until the noodles are well coated.
