Ingredients:

  • 1 (28 oz.) can Dei Fratelli Crushed Tomatoes
  • 3 Cups All Purpose Flour
  • 1 tsp. Baking Soda
  • 1 1/2 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 2 tsp. Cinnamon
  • 1 tsp. Allspice
  • 1/2 tsp. Cardamom
  • 1/2 tsp. Ginger
  • 1 Cup Sour Cream
  • 2 Cups Brown Sugar
  • 1/2 Cup Canola Oil
  • 2 tsp. Vanilla Extract
  • 2 Tbsp. Apple Cider Vinegar
  • Non-Stick Cooking Spray, as needed
  • All Purpose Flour, as needed

Instructions:

  • Preheat oven to 350 F.
  • In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, allspice, cardamom, and ginger. Set aside.
  • In another bowl, mix Dei Fratelli Crushed Tomatoes, sour cream, brown sugar, canola oil, vanilla extract, and apple cider vinegar together until fully incorporated.
  • Pour the tomato mixture into your flour mixture bowl slowly while gently mixing together. Try not to mix too much to avoid a denser cake.
  • Spray a bundt pan or cake pan with non-stick cooking spray and sprinkle soem flour into the pan.
  • Pour your sour cream bundt cake mixture into your bundt or cake pan and bake at 350 F for 45-50 minutes or until a toothpick inserted comes out clean.
  • Remove your spice bundt cake from the oven and allow to cool in the pan for 5 minutes.
  • Flip your bundt cake onto a sheet tray or serving plate and gently tap the bottom.
  • Leave the bundt cake in the pan until it releases and lands on the sheet tray or serving plate, this will occur when the cake has fully cooled and may take 1-1.5 hours.
  • Once your Tomato Sour Cream Bundt Cak is cooled, dust it with powdered sugar and top with a delicious icing glaze.

Want a grab-and-go breakfast? Make the batter and pour it into a greased doughnut pan for delicious baked doughnuts! Bake at 350 F until a toothpick comes out clean.
