Plant-Based Taco Salad Tostadas
Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes
- 2 tsp. Hot Sauce
- 1 tsp. Lime Juice, fresh
- 1 (12 oz.) package Plant-Based Ground Meat Alternative
- 1 Tbsp. Taco Seasoning
- 4 Cups Romaine Lettuce, shredded
- 2 Cups White Onion, sliced
- 2 Cups Red Bell Pepper, sliced
- 1 Cup Plant-Based Colby Jack Cheese, shredded
- 8 Fried Tostada Shells
- Water, as needed
Instructions:
- Char both the onions and peppers in a large skillet over medium-high heat until softened, about 5 minutes. Set aside to cool.
- Using the same pan, combine the plant-based ground meat and taco seasoning and bring to a simmer over medium-low heat for 3-5 minutes. Add water as needed to help incorporate spices. Remove from heat and allow to come to room temperature.
- While the plant-based meat, peppers, and onions are cooling, add Dei Fratelli Chopped Mexican Tomatoes, hot sauce, and lime juice in a high-speed blender and blend on high until smooth, about 1 minute.
- Combine the lettuce, onions, peppers, and 1 cup of the blended sauce in a big bowl and toss to coat.
- Place 1/2 cup of salad mix on the tostada shell, then add 3 Tbsp. meat and top with cheese. Repeat this process with the remaining tostada shells.
