Plant-Based Taco Salad Tostadas

Top your shells with taco salad! Our Plant-Based Taco Salad Tostadas turn this traditional salad into a delicious meal! Made with Dei Fratelli Chopped Mexican Tomatoes, plant-based ground meat, and your favorite taco toppings, this meal can be made to order for the whole family!

Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes
  • 2 tsp. Hot Sauce
  • 1 tsp. Lime Juice, fresh
  • 1 (12 oz.) package Plant-Based Ground Meat Alternative
  • 1 Tbsp. Taco Seasoning
  • 4 Cups Romaine Lettuce, shredded
  • 2 Cups White Onion, sliced
  • 2 Cups Red Bell Pepper, sliced
  • 1 Cup Plant-Based Colby Jack Cheese, shredded
  • 8 Fried Tostada Shells
  • Water, as needed

Instructions:

  • Char both the onions and peppers in a large skillet over medium-high heat until softened, about 5 minutes.  Set aside to cool.
  • Using the same pan, combine the plant-based ground meat and taco seasoning and bring to a simmer over medium-low heat for 3-5 minutes.  Add water as needed to help incorporate spices.  Remove from heat and allow to come to room temperature.
  • While the plant-based meat, peppers, and onions are cooling, add Dei Fratelli Chopped Mexican Tomatoes, hot sauce, and lime juice in a high-speed blender and blend on high until smooth, about 1 minute.
  • Combine the lettuce, onions, peppers, and 1 cup of the blended sauce in a big bowl and toss to coat.
  • Place 1/2 cup of salad mix on the tostada shell, then add 3 Tbsp. meat and top with cheese.  Repeat this process with the remaining tostada shells.

Chef's Tip:

Shaved jalapeno or serrano pepper would be a welcome addition to any taco salad!
