Our favorite quick and easy salad for summer potlucks or as a high-protein lunch! Mix together Dei Fratelli Seasoned Diced Tomatoes, chickpeas, cucumbers, kalamata olives, bell pepper, and red onion for this veggie-packed Loaded Chickpea Salad.

Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Seasoned Diced Tomatoes
- 1 Cup Chickpeas, drained and rinsed
- 1/2 Cup Cucumbers, diced
- 2 Tbsp. Kalamata Olives, chopped
- 2 Tbsp. Red Bell Peppers, diced
- 1 Tbsp. Red Wine Vinegar
- 1 tsp. Sunflower Oil
- 1/2 tsp. Sumac Spice
- 1/4 tsp. Black Pepper
- 1/4 tsp. Sea Salt
Instructions:
- Combine Dei Fratelli Seasoned Diced Tomatoes and all other ingredients together. Serve chilled.
