Grilled Vegetable Salad
Ingredients:
For the Grilled Vegetable Salad:
- 1 (28 oz.) can Dei Fratelli Diced Tomatoes, drained
- 8 oz. Okra
- 2 ears Yellow Corn
- 1 Cucumber, diced
- 1 Yellow Onion, diced
- 1 (15 oz.) can Black Eyed Peas, drained
- 1/2 Cup Cilantro, chopped
- 4 Basil Leaves, minced
For the Cajun Vinaigrette Dressing
- 2 Tbsp. Lime Juice
- 1/2 Cup Avocado Oil
- 2 Tbsp. Maple Syrup
- 1 Tbsp. Balsamic Vinegar
- 1 1/2 tsp. Paprika
- 1/2 tsp. Oregano
- 1/4 tsp. Thyme
- 1 tsp. Granulated Garlic
- 1/2 tsp. Granulated Onion
- 1/2 tsp. Cayenne Pepper
- 1/2 tsp. Black Pepper
- 1/2 tsp. White Pepper
- 1/4 tsp. Red Pepper Flakes
- 1 tsp. Sea Salt
Instructions:
- Begin by preheating your grill.
- Slice off the stems of the okra and cut them in half, lengthwise.
- Grill the corn and okra until they develop char marks and are cooked through. Set the grilled vegetables to the side to cool.
- Mix together all of the ingredients for the cajun vinaigrette and whisk until well blended.
- Once the corn has cooled until it can be easily handled, cut off the kernels trying to keep the kernels into larger strips.
- Begin assembling the Grilled Vegetable Salad. Combine okra, corn, drained Dei Fratelli Diced Tomatoes, onion, cucumber, drained black eye peas, cilantro and basil in a large bowl. Gently toss to fully combine.
- Ensure that your dressing is still well mixed and pour it over the grilled vegetable mixture. Toss gently to coat all the vegetables in the cajun vinaigrette.
- Crumble feta on top to create a delicious and refreshing summer vegetable salad.
