Ingredients:
- 1 (14 oz.) can Silver Fleece Sauerkraut
- 1/2 bunch Kale
- 1/2 Cup All Purpose Flour
- 2 Eggs
- 1/4 Cup Sliced Sausage, can substitute with ham, bacon, or other favorite breakfast protein, if desired
- Cooking Oil, as needed
Instructions:
- Remove the stems from your kale and chop the leaves up to desired size.
- Mix kale leaves with Silver Fleece Sauerkraut. Cover your bowl and let it sit in the fridge overnight.
- Mix the flour, eggs, and sliced sausage together and add to the kale and sauerkraut mixture. You can substitute the sausage for any of your other favorite breakfast proteins too! If the mixture is not holding together or is too thin, add more flour gradually until it is a similar consistency to regular pancake batter.
- Heat cooking oil in a pan over medium heat.
- Scoop out 1/4 cup of the mixture and place in the hot oil. Let the pancake cook until golden brown edges form. Flip the pancake and let the other side crisp up too!
- Once the pancake is cooked, transfer to a clean plate and continue making more pancakes until the batter is completely gone.
