This refreshing Mango Cabbage Slaw includes a #10 can of our Foodservice Dei Fratelli Diced Tomatoes, green cabbage, and mangos mixed together to create tasty, tropical flavor with a crunch. Perfect for a quick and delicious side dish too, this recipe lets your experience salad in a whole new way!

Ingredients:

FOR PEANUT DRESSING:

  • 1 #10 can Diced Tomatoes
  • 4 Cups Peanut Butter
  • 1 Cup Apple Cider Vinegar
  • 1 Cup Tamari
  • 1 Cup Maple Syrup
  • 4 tsp. Lime Juice
  • 4 tsp. Sea Salt
  • 2 tsp. Sesame Oil
  • 2 tsp. Garlic, minced
  • 2 tsp. Cayenne Pepper

FOR MANGO CABBAGE SLAW:

  • 3 Mangos, peeled and thinly sliced
  • 1 Green Cabbage, washed and shaved
  • 1 Cup Scallions, sliced
  • 1/2 Cup Red Bell Pepper, small diced
  • 1/4 Cup + 1 Tbsp. Red Onion, small diced
  • 1/4 Cup Jalapeno, minced
  • 4 tsp. Vinegar

Instructions:

FOR PEANUT DRESSING:

  • In a large bowl, combine Dei Fratelli Diced Tomatoes, peanut butter, apple cider vinegar, tamari, maple syrup, salt, sesame oil, garlic, and cayenne. Transfer to a large food processor and blend until smooth. May need to be made in multiple batches.

FOR MANGO CABBAGE SLAW:

  • In a separate large bowl, mix remaining ingredients until well combined. Toss with peanut dressing.

Chef's Tip:

Serve with field greens and chickpeas.  Make this dish peanut-free by substituting peanut butter with your other favorite nut butter.
