This one-pot Lentil Soup combines fresh veggies and bold spices to make an amazing soup that is perfect for Foodservice. Add a #10 can of Dei Fratelli Petite Diced Tomatoes, white onions, and of course, green lentils for this soup that is sure to please everyone.

Ingredients:

  • 1 #10 can Petite Diced Tomatoes
  • 4 Cups White Onion, medium diced
  • 2 Cups Carrot, peeled, medium diced
  • 2 Cups Celery, medium diced
  • 4 tsp. Black Pepper
  • 2 tsp. Coriander
  • 2 tsp. Thyme, dried
  • 2 3/4 gallons Vegetable Stock
  • 8 Cups Green Lentils, split

Instructions:

  • In a large stock pot, sweat onions, carrot, and celery over medium heat until softened, about 8 minutes. Add black pepper, coriander, and thyme. Combine well and continue cooking another 2 minutes.
  • Add Dei Fratelli Petite Diced Tomatoes and vegetable stock and bring to a simmer. Add lentils and continue to simmer for 15 minutes, or until lentils are tender.

Chef's Tip:

Garnish with celery leaves.
