Fiesta Chicken Pasta Salad

You can serve this Fiesta Chicken Pasta Salad by itself, on a bed of mixed greens, or a toasted baguette. Mix Dei Fratelli Our Original Salsa Medium, Dei Fratelli Chopped Mexican Tomatoes, and chicken for this delicious pasta salad.

Ingredients:
- 1 (70 oz.) Jug Our Original Salsa Medium
- 4 (14.5 oz.) cans Dei Fratelli Chopped Mexican Tomatoes, drained
- 4 lbs. Farfalle Pasta
- 4 lbs. Rotisserie Chicken, fully cooked and shredded
- 4 (4 oz.) cans Green Chilies, diced and drained
- 2 Cups Corn, drained and rinsed
- 2 Cups Black Beans, drained and rinsed
- 1/4 Cup Fresh Cilantro, chopped
Instructions:
- Bring a large pot of water to a boil. Cook farfalle pasta according to package instructions. Drain and set aside to cool.
- In a large bowl, mix Dei Fratelli Our Original Salsa Medium, Dei Fratelli Chopped Mexican Tomatoes, chicken, chilies, black beans, corn, and cilantro. Fold in the pasta.
Chef's Tip:
Serve by itself, at room temperature, on a bed of mixed greens, or on a toasted baguette. Garnish with more fresh, chopped cilantro.
