  • 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes, drained and patted dry
  • 1 roll Refrigerated Pie Crust
  • 1 Tbsp. Fresh Basil, chopped
  • Salt, to taste
  • Black Pepper, to taste
  • 1/3 Cup Mayonnaise
  • 1/2 Cup Parmesan Cheese, grated
  • 1/4 Cup Cheddar Cheese, shredded
  • 1/4 Cup Mozzarella Cheese, shredded

  • Preheat oven to 425 F.
  • Unroll pie crust and cut into circles, about 24, using a 2-inch cookie cutter. Press the circles into ungreased miniature muffin cups, making sure to press into the sides to form a cup.
  • Poke the bottoms of the dough with a fork. Bake for 5 minutes or until set. Remove from oven and allow to cool.
  • While the dough is cooling, reduce the oven heat to 350 F.
  • In a small bowl, combine Dei Fratelli Petite Diced Tomatoes and basil. Season with salt and pepper to taste.
  • In a second small bowl, mix the mayonnaise, parmesan cheese, cheddar cheese, and mozzarella cheese together.
  • Divide the tomato mixture evenly among the pastry shells, then top each one with the cheese mixture. Bake for 18-20 minutes, or until cheese is golden brown.

Chef's Tip:
