A quick and cheesy appetizer! Our Cheesy Tomato Tarts combine Dei Fratelli Petite Diced Tomatoes with refrigerated pie crust, basil, and 3 different kinds of cheeses for a tasty and delicious bite-sized snack, similar to cheese crisps!
- 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes, drained and patted dry
- 1 roll Refrigerated Pie Crust
- 1 Tbsp. Fresh Basil, chopped
- Salt, to taste
- Black Pepper, to taste
- 1/3 Cup Mayonnaise
- 1/2 Cup Parmesan Cheese, grated
- 1/4 Cup Cheddar Cheese, shredded
- 1/4 Cup Mozzarella Cheese, shredded

Preheat oven to 425 F.
Unroll pie crust and cut into circles, about 24, using a 2-inch cookie cutter. Press the circles into ungreased miniature muffin cups, making sure to press into the sides to form a cup.
Poke the bottoms of the dough with a fork. Bake for 5 minutes or until set. Remove from oven and allow to cool.
While the dough is cooling, reduce the oven heat to 350 F.
In a small bowl, combine Dei Fratelli Petite Diced Tomatoes and basil. Season with salt and pepper to taste. In a second small bowl, mix the mayonnaise, parmesan cheese, cheddar cheese, and mozzarella cheese together.
Divide the tomato mixture evenly among the pastry shells, then top each one with the cheese mixture. Bake for 18-20 minutes, or until cheese is golden brown.
