Fire Roasted Tomato & Maple Pumpkin Soup
Ingredients:
- 1 (28 oz.) can Dei Fratelli Fire Roasted Crushed Tomatoes
- 1 (15 oz.) can Pumpkin Puree
- 2 1/2 Cups Vegetable Stock
- 1/2 Cup White Onion, diced
- 1/4 Cup Maple Syrup
- 2 Tbsp. Extra Virgin Olive Oil
- 1 Tbsp. Granulated Onion
- 2 tsp. Parsley
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Nutmeg
- 1/2 tsp. Black Pepper
- Salt, to taste
Instructions:
- Add all ingredients to a blender and combine until smooth.
- Transfer to a medium pot annd simmer for 8-10 minutes over medium heat.
