11 Layer Dip
Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes, drained, reserve juice
- 1/2 lb. Bacon, roughly chopped
- 1 lb. Ground Pork
- 1 (4 oz.) can Green Chilies, diced
- 1 (15 oz.) can Refried Beans
- 2 Cups Sour Cream
- 1/4 Cup Fresh Cilantro, chopped
- 1/2 Lime, juiced
- 1 (15 oz.) can Black Olives, drained, rinsed, and chopped
- 1 Avocado, diced
- 2 Cups Iceberg Lettuce, shredded
- 1 1/2 Cups Mexican Cheese Blend, shredded
- 1 Bunch Chives, sliced
- 1 1/2 Cups Pork Rinds, crushed
Instructions:
- Heat a large skillet over medium heat. Add the bacon pieces and allow to cook until crispy, about 15 minutes. Drain the bacon grease and set bacon aside to cool.
- Add ground pork to the pan and cook over medium-high heat until browned, about 8-10 minutes. Add reserved juice from Dei Fratelli Chopped Mexican Tomatoes and continue cooking until juice evaporates, about 5 minutes. Drain and set pork aside to cool.
- While pork is cooking, mix green chilies and refried beans together. Simmer on low heat until just warmed through, about 5 minutes. Set aside.
- In a separate bowl, mix together the sour cream, cilantro, and lime juice until well combined. Set aside.
- In a 2.5-quart glass bowl, 9x13 glass casserole dish, or 9" trifle bowl, begin to assemble the dip. Layer as follows: bean and chilies mixture, ground pork, sour cream mixture, olives, avocado, Dei Fratelli Chopped Mexican Tomatoes, lettuce, bacon, cheese, chives, and pork rinds.
