Ingredients:
- 1 (28 oz.) can Dei Fratelli Stewed Tomatoes, drained
- 1 (15 oz.) can Pumpkin Puree
- 2 1/2 Cups Vegetable Stock
- 1 Tbsp. + 1 tsp. Balsamic Vinegar
- 1 Tbsp. + 1 tsp. Honey
- 1 tsp. Garlic, minced
- 1/2 tsp. Ginger, ground
- 1/4 tsp. Nutmeg
- 1/4 tsp. Salt
- 1/4 tsp. Black Pepper
Instructions:
- Combine all ingredients, except drained Dei Fratelli Stewed Tomatoes, into a blender and mix until smooth. Add tomatoes and pulse until medium-sized chunks are present, about 5 minutes.
- Transfer to a medium-sized pot and simmer on medium-heat for 8-10 minutes.
Chef's Tip:
Fresh out of pumpkin? Try substituting with canned sweet potatoes or yams.
