This fall favorite recipe is deliciously made with Dei Fratelli Stewed Tomatoes and pumpkin puree. Stewed Tomato & Pumpkin Soup is seasoned with your favorite fall spices to create this warm and inviting soup perfect for a chilly day.

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Stewed Tomatoes, drained
  • 1 (15 oz.) can Pumpkin Puree
  • 2 1/2 Cups Vegetable Stock
  • 1 Tbsp. + 1 tsp. Balsamic Vinegar
  • 1 Tbsp. + 1 tsp. Honey
  • 1 tsp. Garlic, minced
  • 1/2 tsp. Ginger, ground
  • 1/4 tsp. Nutmeg
  • 1/4 tsp. Salt
  • 1/4 tsp. Black Pepper

Instructions:

  • Combine all ingredients, except drained Dei Fratelli Stewed Tomatoes, into a blender and mix until smooth.  Add tomatoes and pulse until medium-sized chunks are present, about 5 minutes.
  • Transfer to a medium-sized pot and simmer on medium-heat for 8-10 minutes.

Chef's Tip:

Fresh out of pumpkin?  Try substituting with canned sweet potatoes or yams.
Make this recipe plant-based by substituting the honey for maple syrup!
