Wake up to the smell of our Spinach & Tomato Breakfast Mug! This recipe is the perfect plant-based omelet made right in your microwave with Dei Fratelli Diced Tomatoes, spinach, plant-based egg scramble, and your favorite seasonings!

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Diced Tomatoes, drained
  • 2 Cups Spinach, fresh
  • 2 Cups Plant-Based Egg Scramble
  • 1/2 tsp. Sea Salt
  • Black Pepper, to taste
  • Nonstick Cooking Spray, as needed

Instructions:

  • Lightly spray the inside of each of the 4 mugs with non-stick cooking spray.
  • Put equal amounts of Dei Fratelli Diced Tomatoes and spinach in each mug and cook in the microwave for 30 seconds at full power.
  • Add the plant-based egg scramble and cook for 30 seconds, stir and place back in the microwave for 30 seconds. Repeat until scramble is fully cooked.
  • Allow the mug to cool for a few minutes before enjoying. It may be very hot.

Add your favorite plant-based cheese or other ingredients.  This is the perfect quick, on the go, breakfast solution!
