Our Spanish Gazpacho is the perfect spicy soup with classic flavors! Made with Dei Fratelli Petite Diced Tomatoes, cumin, cayenne, cucumber, and red bell pepper, this soup is a delicious, no cooking required, lunch recipe!

Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes
- 2 slices Bread, cut into 1/2" cubes
- 1/2 Cup Cucumber, peeled and diced
- 1/2 Cup Red Bell Pepper, seeded and diced
- 1/4 Cup Sweet Onion, diced
- 1 Tbsp. Sherry Wine Vinegar
- 1 Tbsp. Extra Virgin Olive Oil
- 1 tsp. Garlic, minced
- 1/4 tsp. Salt
- Black Pepper, to taste
Instructions:
- Soak bread cubes in water for 15 minutes. Remove from water and squeeze out excess moisture with hands.
- Combine Dei Fratelli Petite Diced Tomatoes and all other ingredients in a blender or food processor and puree until smooth.
Chef's Tip:
Serve as an appetizer with toasted baguette slices.
