Get the whole family excited for fajitas with our easy Slow Cooker Fajitas! Just combine Dei Fratelli Chopped Mexican Tomatoes, peppers, onion, and chicken thighs in your slow cooker for this tasty family dinner to celebrate Fajita Fridays!

Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes
  • 2 lbs. Chicken Thighs, boneless and skinless
  • 1 Green Bell Pepper, cut into 1/4" strips
  • 1 Yellow Bell Pepper, cut into 1/4" strips
  • 1 Red Bell Pepper, cut into 1/4" strips
  • 1 large White Onion, cut into 1/4" strips
  • 2 tsp. Chili Powder
  • 1 tsp. Paprika
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Cumin, ground
  • 1/4 tsp. Cayenne Pepper
  • 1 Lime, juiced
  • 1/2 Cup Chicken Stock
  • 8-12 Flour Tortillas, fajita size

Instructions:

  • Place chicken thighs, peppers, and onion in a slow cooker.
  • In a small bowl, mix together the spices and salt. Sprinkle all of the seasonings on top of the peppers and chicken.
  • Add Dei Fratelli Chopped Mexican Tomatoes, chicken stock, and lime juice to the slow cooker and cook on high for 4 hours or on low for 8 hours.
  • Serve on fajita-size flour tortillas with your favorite toppings!

Chef's Tip:

If there is excess liquid from the slow cooker, drain the liquid into a saucepan and bring it to a simmer over medium heat for 10-15 minutes or until the liquid begins to reduce.  This will create a flavorful and delicious sauce you can top your fajitas with!
