Made right in your slow cooker, this recipe is made to travel and stay warm for all the football festivities!

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Diced Tomatoes
  • 2 lbs. Chicken Breast or Thighs, sliced
  • 2 (1 oz.) packets Ranch Seasoning
  • 1 Cup Chicken Stock
  • Tortilla Chips, as needed
  • 1 Jalapeno, sliced
  • ¼ Cup Red Onion, diced
  • ½ Cup Queso Fresco, crumbled
  • ¼ Cup Green Onion, sliced
  • ¼ Cup Cilantro, chopped
  • Ranch Dressing, to taste

Instructions:

  • Combine Dei Fratelli Diced Tomatoes, chicken, ranch packets, and chicken stock in a slow cooker.
  • Cook on high for 4 hours or on low for 8 hours
  • Spread tortilla chips on a baking sheet and top with chicken mixture from the slow cooker.
  • Top chicken with jalapeno, red onion, and queso fresco.
  • Garnish with cilantro, green onion, and drizzles of ranch dressing.
