Shrimp Bruschetta
Ingredients:
- 1 (28 oz.) can Dei Fratelli Petite Diced Tomatoes
- 2 1/2 Cups Cooked Shrimp, chopped
- 1 Cup Red Onion, diced
- 1/2 Cup Banana Peppers, jarred, diced
- 3 Tbsp. Fresh Parsley, chopped
- 1 tsp. Granulated Onion
- 1/2 tsp. Black Pepper
- 1 Baguette, sliced open and cut into 4 pieces, about 4" each
- 8 Tbsp. Extra Virgin Olive Oil
- 8 Tbsp. Goat Cheese, crumbled
Instructions:
- Preheat oven to 400 F.
- In a medium bowl, combine Dei Fratelli Petite Diced Tomatoes, shrimp, red onion, banana peppers, parsley, onion, and pepper. Let rest in fridge.
- Coat baguette slices in 2 Tbsp. olive oil. Heat a skillet over medium heat and place baguettes open-side down. Let cook until golden brown, about 2-3 minutes.
- Sprinkle 2 Tbsp. of goat cheese on each and place on a baking sheet. Bake until cheese is melted, about 5-6 minute. Let cool.
- Serve shrimp mixture on cheesy toast.
