Sauerkraut Chocolate Cake

Ingredients:

For Cake:

  • 1 (14 oz.) can Silver Fleece Sauerkraut, drained
  • 1/2 Cup Butter, softened
  • 1 1/2 Cups Sugar
  • 3 Eggs
  • 1 tsp. Vanilla Extract
  • 1 Cup Flour, sifted
  • 1/2 Cup Cocoa Powder
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1 Cup Water

For Frosting:

  • 3 Cups Semi-Sweet Chocolate Chips
  • 4 Tbsp. Butter
  • 1/2 Cup Sour Cream
  • 1 tsp. Vanilla Extract
  • 1/4 tsp. Salt
  • 2 Cups Powdered Sugar

Instructions:

  • Preheat oven to 350 F.
  • For the cake, using a stand mixer or hand mixer, cream together butter and sugar.  Gradually add Silver Fleece Sauerkraut, followed by eggs and vanilla, mixing constantly.
  • In a separate bowl, sift together flour, cocoa, baking powder, and baking soda. Gradually adding the flour mixture and wate r alternately to sauerkraut mixture, mixing constantly.
  • Add cake batter to a greased 9×13 baking dish.  Bake for 35-40 minutes and allow to cool.
  • For frosting, in a small saucepan melt chocolate chips and butter over low heat, stirring occasionally. Remove from heat and add sour cream, vanilla, and salt. Mix well. Gradually add powdered sugar and combine to desired consistency. Frost cooled cake.

Chef's Tip:

This recipe would be great for cupcakes too!
Mix it up and try vanilla bean or a plant-based peanut butter frosting!
