Add some color to your snacks with this Rainbow Salsa! With Dei Fratelli Crushed and Diced Tomatoes, 3 different bell peppers, red onion, jalapeno, and the fresh citrus flavor of orange juice, this salsa is just what you need to brighten up your afternoon!

Ingredients:

  • 1 (28 oz.) can Dei Fratelli Crushed Tomatoes
  • 1 (28 oz.) can Dei Fratelli Diced Tomatoes, drained
  • 1 Orange Bell Pepper, diced small
  • 1 Yellow Bell Pepper, diced small
  • 1 Green Bell Pepper, diced small
  • 1 Red Onion, diced small
  • 2 Jalapeno, minced
  • 1/2 Cup Cilantro, chopped
  • 1/2 Cup Orange Juice
  • 2 tsp. Orange Zest
  • 2 tsp. Sea Salt
  • 2 tsp. Black Pepper
  • 1 (15.25 oz.) can Corn, drained and rinsed
  • 1 (15.5 oz.) can Black Beans, drained and rinsed

Instructions:

  • In a large bowl, combine Dei Fratelli Crushed Tomatoes, Dei Fratelli Diced Tomatoes, peppers, onion, jalapeno, cilantro, orange juice, orange zest, and seasonings.
  • Transfer mixture to a food processor and pulse 3-4 times or until desired texture.
  • Remove salsa from food processor and mix in black beans and corn.
  • Serve with pita bread, fresh veggies, or blue corn chips for the full rainbow effect!

Chef's Tip:

Skip the food processor step and just mix in your black beans and corn for a quick and flavorful pico de gallo salsa!
