Mexican Gelatin Salsa Dip
Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Chopped Mexican Tomatoes
- 1 (14.5 oz.) can Dei Fratelli Chili Ready Diced Tomatoes
- 3/8 Cup Water, divided
- 1/8 Cup Apple Cider Vinegar
- 1 (3 oz.) box Lime Gelatin
- 1/2 Cup Onion, diced
- 1/2 Cup Black Olives, sliced
- 1 tsp. Cilantro, chopped
- 1 head Lettuce, chopped, for serving
- Sour Cream, for serving
- Tortilla Chips, for serving
Instructions:
- Combine Dei Fratelli Chopped Mexican Tomatoes with 1/8 cup of water and apple cider vinegar. Refrigerate for 30 minutes.
- Combine Dei Fratelli Chili Ready Diced Tomatoes with 1/4 cup of water in a small saucepan. Bring to a boil over medium heat, stirring occasionally.
- Once boiling, remove from heat and gradually add lime gelatin, stirring continuously. Stir until gelatin is well dissolved, about 2 minutes. Let cool.
- Once cooled, add the Mexican tomatoes mixture, onions, black olives, and cilantro to the gelatin mixture. Pour into a mold or metal pan and refrigerate for at least 3 hours. For best results, refrigerate overnight.
- When ready to serve, place mold or metal pan in hot water for about 10 seconds, making sure not to get any water into the pan.
- Place the chopped lettuce around the mold, add sour cream to the center, and serve with tortilla chips.
