Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes with Onion, Celery, and Peppers, drained
  • 1 1/2 Cups White Rice
  • 1/4 Cup Pimento Peppers, diced
  • 1/2 Sweet Onion, diced
  • 1/2 tsp. Oregano, dried
  • 1/2 tsp. Basil, dried
  • 1/2 Cup Parmesan Cheese, grated
  • 1 tsp. Fresh Thyme
  • 1/4 Cup Chives, minced
  • 1/2 tsp. Sea Salt
  • 1/2 tsp. Black Pepper
  • 2 Eggs
  • Panko Breadcrumbs, as needed
  • All Purpose Flour, as needed
  • Canola Oil, or choice of frying oil, as needed

Instructions:

  • Cook your rice according to the directions on the package. Once cooked, put the rice in the refrigerator to cool.
  • While your rice is cooling, combine Dei Fratelli Petite Diced Tomatoes with Onion, Celery, and Peppers with the pimento peppers, onion, oregano, basil, and grated parmesan cheese. Mix together well and set this tomato mixture aside.
  • In another bowl, combine the cooled rice, thyme, chives, salt, pepper, and eggs together. Mix together well and set aside.
  • Tear off a small square of plastic wrap and spread some of the rice mixture in a 4-inch circle. In the center of the rice circle, put 2 Tbsp. of the tomato mixture.
  • Fold the plastic wrap up so you are wrapping the rice around the tomato mixture forming a ball.
  • Repeat steps 4-5 until you run out of the rice mixture and the tomato mixture. This recipe should make about 8 balls.
  • Leaving the tomato croquettes wrapped in the plastic wrap, freeze them for 30 minutes.
  • While the croquettes are in the freezer, begin preparing your frying oil. Pour your cooking oil in a large, deep pan so that there is 1-inch of oil on the bottom.
  • Heat the oil on your stovetop until it reaches 350-375 F. Maintain this temperature for the duration of your cooking.
  • Take the chilled croquettes out of the freezer and remove the plastic wrap from around them.
  • Grab 3 small bowls, and put all purpose flour in one, 2 eggs blended in another, and panko bread crumbs in the last bowl.
  • Coat each croquette in the all purpose flour, followed by the egg wash, and lastly the breadcrumbs.
  • Once all croquettes are coated, place them in the hot oil to fry for about 6-8 minutes on each side or until they become golden brown.
  • Place the Fried Tomato Croquettes on a plate lined with paper towel to absorb any excess oil and cool before serving.
