Thai Coconut Curry Soup

The spice and brightness from this Thai Coconut Curry Soup will have everybody wanting seconds. Our #10 can of Dei Fratelli Diced Tomatoes along with curry spice powder and coconut sugar, provides a more intense flavored Foodservice soup that will have everyone wanting seconds.

Ingredients:
- 1 #10 can Diced Tomatoes
- 1 Cup White Onion, diced
- 1/2 Cup Carrot, diced
- 1/4 Cup Coconut Sugar
- 4 tsp. Sea Salt
- 2 tsp. Curry Spice Powder
- 1 tsp. Coriander
- 1 tsp. Ginger, ground
- 1/4 tsp. Allspice
- 2 (14 oz.) cans Unsweetened Coconut Milk
Instructions:
- In a large pot, sauté onion and carrot over medium heat until tender, about 8 minutes. Add sugar, sea salt, curry spice, coriander, ginger, and allspice. Stir and continue cooking another 2 minutes.
- Add Dei Fratelli Diced Tomatoes and coconut milk. Reduce heat and simmer for 20 minutes.
- Allow soup to slightly cool and transfer in batches to a large food processor. Blend until smooth.
Chef's Tip:
Garnish with fresh, chopped, parsley and a squeeze of lime
