Ingredients:

  • 1 #10 can Diced Tomatoes
  • 1 Cup White Onion, diced
  • 1/2 Cup Carrot, diced
  • 1/4 Cup Coconut Sugar
  • 4 tsp. Sea Salt
  • 2 tsp. Curry Spice Powder
  • 1 tsp. Coriander
  • 1 tsp. Ginger, ground
  • 1/4 tsp. Allspice
  • 2 (14 oz.) cans Unsweetened Coconut Milk

Instructions:

  • In a large pot, sauté onion and carrot over medium heat until tender, about 8 minutes. Add sugar, sea salt, curry spice, coriander, ginger, and allspice. Stir and continue cooking another 2 minutes.
  • Add Dei Fratelli Diced Tomatoes and coconut milk. Reduce heat and simmer for 20 minutes.
  • Allow soup to slightly cool and transfer in batches to a large food processor. Blend until smooth.

Chef's Tip:

Garnish with fresh, chopped, parsley and a squeeze of lime
