Seafood Red Sauce
Servings: 12 servings
This Seafood Red Sauce creates a perfect complement to a wide variety of seafood. Combining a #10 can of Crushed Tomatoes in Puree, clam juice, and roasted red pepper strips to make an amazing Foodservice sauce with homemade flavor. After letting the sauce cool, you can keep it refrigerated for up to 5 days.

Ingredients:
- 1 #10 can Crushed Tomatoes in Puree
- 1/4 Cup Vegetable Oil
- 1 Cup Roasted Red Pepper Strips
- 2 Tbsp. Capers, rinsed and smashed
- 1 Cup White Wine
- 2 Cups Clam Juice, divided
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 1/4 tsp. Dried Thyme
- 3 Tbsp. Lemon Juice
Instructions:
- Heat vegetable oil in a large pot over medium heat. Add red pepper strips and capers and sweat until slightly browned, about 4 minutes.
- Add white wine and reduce by 2/3 volume. Add half of the clam juice and bring to a simmer.
- Add Dei Fratelli Crushed Tomatoes in Puree, salt, black pepper, and thyme. Simmer for 10 minutes over medium heat.
- Add remaining clam juice and all of the lemon juice and cook for another 10 minutes.
- Allow to cool and refrigerate for up to 5 days.
Chef's Tip:
Serve over choice of pasta with steamed mussels.
