Could it get any simpler with our Quick and Easy Gazpacho? Combining a #10 Foodservice can of Petite Diced Tomatoes, cucumber, and white onion into a large food processor or blender creates a fresh and tasty Gazpacho that everyone will love.

Ingredients:

  • 1 #10 can Petite Diced Tomatoes
  • 6 Cups Cucumber, peeled and diced
  • 3 Cups Anaheim Pepper, diced
  • 1 1/2 Cups White Onion, diced
  • 1 1/2 Cups Water
  • 3/4 Cup Red Wine Vinegar
  • 3/4 Cup Extra Virgin Olive Oil
  • 1 Tbsp. Sea Salt
  • 1 Tbsp. Garlic, minced
  • 1 1/2 tsp. Sugar
  • 3/4 tsp. Granulated Onion
  • 3/4 tsp. Granulated Garlic

Instructions:

  • Combine all ingredients in a large food processor or blender and pulse down until pieces are uniform and between 1/4" to 3/8" in size.

Chef's Tip:

Serve this summer treat with some tortilla chips or fresh-cut veggies.
