  • 2 1/4 Cups Gluten-Free All-Purpose Baking Mix
  • 1 Tbsp. Sugar
  • 2 tsp. Active Dry Yeast
  • 1 1/2 Cups Water, lukewarm
  • 5 Tbsp. Extra Virgin Olive Oil
  • 1 tsp. Italian Seasoning




  • Combine all-purpose baking mix and sugar in a large bowl. Mix until well blended.
  • In a small bowl, combine lukewarm water, 3 Tbsp. olive oil, and yeast. Stir slightly and add 1 cup of the dry mixture. Mix until well combined. Let this mixture sit for 30-45 minutes, or until it forms bubbles.
  • Attach a dough hook to your stand mixer. Place the remaining baking mix and sugar mixture in a bowl. Add the yeast mixture and mix on medium-high speed for 5 minutes. The dough should be thick and sticky, but not stretchy.
  • Cover the bowl with plastic wrap and allow the dough to rise for 45 minutes.
  • While the dough is rising, preheat the oven to 375 F.
  • Prep your 9x13 sheet pan by lightly spraying with non-stick cooking spray and spreading 2 Tbsp. of olive oil on the sheet pan. This combination will prevent the bread from sticking to the sheet pan while also becoming crispy on the bottom.
  • Sprinkle Italian seasoning on top of the oiled sheet pan before placing dough on top.
  • Place dough in the center of your sheet pan and spread the dough out towards the edges of the sheet pan with your fingertips. Continue spreading until the dough fills the bottom of the sheet pan.
  • Let the dough rest uncovered in the sheet pan for 30 minutes.
  • Bake the focaccia dough for 22 minutes or until the top springs back up when pressed down.
  • Remove focaccia bread from the oven and flip the sheet pan over a cooling rack to release the focaccia bread out of the pan.


  • Preheat your oven to 425 F.
  • Place the cooled focaccia bread bottom side up on a sheet pan.
  • Spread Dei Fratelli Simply Pizza Sauce evenly over the focaccia bread.
  • Top your pizza with fresh mozzarella slices and sprinkle with Italian seasoning.
  • Bake in your oven for 15-20 minutes.
  • Remove from the oven and top with fresh basil right before serving.

Chef's Tip:

More cheese, please.  Top this pizza with more mozzarella cheese and add some parmesan cheese too for an extra cheesy focaccia pizza!
