Collard Green Tabbouleh
Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes, drained and rinsed
- 1 Cup Quinoa
- 1 Cup Water
- 2 Cups Collard Greens, finely chopped
- 1 1/2 Tbsp. Scallions, sliced
- 1 Tbsp. Lemon Juice
- 1 tsp. Garlic, minced
- 1/2 tsp. Sea Salt
- 1/4 tsp. Black Pepper
Instructions:
- Combine quinoa and water in a small saucepan and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Drain and set aside to cool.
- Once cooled, mix all ingredients in a bowl until well combined.
