Ingredients:

For Black Bean Sloppy Joes:

  • 1 (15 oz.) can Dei Fratelli Tomato Sauce
  • 2 Tbsp. Extra Virgin Olive Oil
  • ½ Cup Yellow Onion, diced
  • ½ Cup Green Bell Pepper, diced
  • ½ Cup Red Bell Pepper, diced
  • 1 tsp. Garlic, minced
  • 1 (28 oz.) can Black Beans, drained and rinsed
  • 2 Tbsp. Brown Sugar, packed
  • 1 tsp. Yellow Mustard
  • ½ tsp. Sea Salt
  • ¼ tsp. Black Pepper
  • 2 tsp. Plant-Based Worcestershire Sauce
  • 6 Hamburger Buns

For Pickled Purple Cabbage (Optional):

  • ½ head Purple Cabbage, shredded
  • 1 Cup Water
  • 1 Cup White Distilled Vinegar
  • 1 Tbsp. Granulated Sugar
  • 1 tsp. Sea Salt

Instructions:

For Black Bean Sloppy Joes:

  • In a large skillet, heat olive oil over medium-high heat. Add diced onion and cook until the onion is translucent about 5-6 minutes.
  • Add minced garlic, red bell pepper, and green bell pepper and saute until the peppers begin to soften about 5-6 minutes.
  • Add black beans, Dei Fratelli Tomato Sauce, seasonings, and Worcestershire sauce to a large skillet. Mix all ingredients together until they are well combined.
  • Turn heat down to low and simmer for about 10 minutes or until the mixture is warmed through.
  • Spread Black Bean Sloppy Joe mixture over bottom hamburger buns and top with optional Pickled Purple Cabbage.

For the Pickled Purple Cabbage:

  • Bring water, vinegar, sugar, and salt to a boil. Ensure that the sugar gets fully dissolved.
  • Place shredded cabbage in a large bowl, and pour the mixture over it.
  • Cover the bowl of shredded cabbage with plastic wrap and refrigerate overnight.
