Black Bean Sloppy Joes
Ingredients:
For Black Bean Sloppy Joes:
- 1 (15 oz.) can Dei Fratelli Tomato Sauce
- 2 Tbsp. Extra Virgin Olive Oil
- ½ Cup Yellow Onion, diced
- ½ Cup Green Bell Pepper, diced
- ½ Cup Red Bell Pepper, diced
- 1 tsp. Garlic, minced
- 1 (28 oz.) can Black Beans, drained and rinsed
- 2 Tbsp. Brown Sugar, packed
- 1 tsp. Yellow Mustard
- ½ tsp. Sea Salt
- ¼ tsp. Black Pepper
- 2 tsp. Plant-Based Worcestershire Sauce
- 6 Hamburger Buns
For Pickled Purple Cabbage (Optional):
- ½ head Purple Cabbage, shredded
- 1 Cup Water
- 1 Cup White Distilled Vinegar
- 1 Tbsp. Granulated Sugar
- 1 tsp. Sea Salt
Instructions:
For Black Bean Sloppy Joes:
- In a large skillet, heat olive oil over medium-high heat. Add diced onion and cook until the onion is translucent about 5-6 minutes.
- Add minced garlic, red bell pepper, and green bell pepper and saute until the peppers begin to soften about 5-6 minutes.
- Add black beans, Dei Fratelli Tomato Sauce, seasonings, and Worcestershire sauce to a large skillet. Mix all ingredients together until they are well combined.
- Turn heat down to low and simmer for about 10 minutes or until the mixture is warmed through.
- Spread Black Bean Sloppy Joe mixture over bottom hamburger buns and top with optional Pickled Purple Cabbage.
For the Pickled Purple Cabbage:
- Bring water, vinegar, sugar, and salt to a boil. Ensure that the sugar gets fully dissolved.
- Place shredded cabbage in a large bowl, and pour the mixture over it.
- Cover the bowl of shredded cabbage with plastic wrap and refrigerate overnight.
