Plant-Based Savory Cookies
Ingredients:
FOR TOMATO SECRET:
- 1 (28 oz.) can Dei Fratelli Stewed Tomatoes
- Nonstick Cooking Spray, as needed
FOR PLANT-BASED SAVORY COOKIES:
- 1/2 Cup Tomato Secret Recipe
- 1 Cup Gluten-Free Flour
- 2/3 Cup Plant-Based Parmesan Cheese, grated
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- 2/3 Cup Plant-Based Meat Crumbles, cooked
- Egg Replacer, follow instructions for 2 eggs equivalent
- 2 Figs, minced
- 5 Tbsp. Sunflower Oil
- 2 Tbsp. Water
- 1 Tbsp. Oregano, dried
- 1/2 Cup Plant-Based Butter, melted
- 2 tsp. Roasted Garlic, minced
Instructions:
FOR TOMATO SECRET:
- Preheat oven to 300 F.
- Spray a baking sheet with oil. Pat Dei Fratelli Stewed Tomatoes with a paper towel to remove any excess moisture, as much as possible. Place tomatoes evenly throughout the tray to ensure even baking. Bake tomatoes for 40 minutes.
- Remove from oven and allow to cool completely. Store in the fridge.
FOR PLANT-BASED SAVORY COOKIES:
- Preheat oven to 325 F.
- In a small bowl, combine flour, cheese, baking soda, and baking powder. Set aside.
- In a larger bowl, combine Tomato Secret, plant-based beef, egg replacer, figs, oil, water, and oregano. Slowly incorporate the flour and mix until a dough is formed.
- Place spoon-sized balls of the dough on a parchment-lined baking sheet. Bake for 8 minutes.
- Combine the melted butter and garlic in a small bowl. Remove the cookies from the oven and brush a generous amount of butter over each cookie. Continue baking for 2 additional minutes.
