Wake up to the smell of our Spinach & Tomato Breakfast Mug! This recipe is the perfect plant-based omelet made right in your microwave with Dei Fratelli Diced Tomatoes, spinach, plant-based egg scramble, and your favorite seasonings!

Ingredients:
- 1 (28 oz.) can Dei Fratelli Diced Tomatoes, drained
- 2 Cups Spinach, fresh
- 2 Cups Plant-Based Egg Scramble
- 1/2 tsp. Sea Salt
- Black Pepper, to taste
- Nonstick Cooking Spray, as needed
Instructions:
- Lightly spray the inside of each of the 4 mugs with non-stick cooking spray.
- Put equal amounts of Dei Fratelli Diced Tomatoes and spinach in each mug and cook in the microwave for 30 seconds at full power.
- Add the plant-based egg scramble and cook for 30 seconds, stir and place back in the microwave for 30 seconds. Repeat until scramble is fully cooked.
- Allow the mug to cool for a few minutes before enjoying. It may be very hot.
