Spanish Beans & Rice are the perfect side dish that can be made in under an hour! Combining a #10 can of Dei Fratelli Diced Tomatoes, white onion, and Spanish-style rice to create a Foodservice recipe that offers 16 servings to make sure everyone gets some of this great recipe.

Ingredients:
- 1 #10 can Diced Tomatoes
- 2 Cups White Onion, diced
- 2 Cups Red Bell Pepper, small diced
- 1/4 Cup Jalapeno, small diced
- 4 tsp. Garlic, minced
- 1 #10 can Red Beans, drained and rinsed
- 2 Tbsp. Vinegar
- 4 tsp. Paprika
- 4 tsp. Cumin
- 2 tsp. Granulated Garlic
- 2 tsp. Onion Powder, toasted
- 16 Cups Spanish Style Rice
- 1/2 Cup Fresh Cilantro, chopped
- 1/2 Cup Fresh Parsley, chopped
- 1 lb. Spanish Green Olives
Instructions:
- In a large saucepan, sweat onion, bell pepper, jalapeno, and garlic over medium-high heat until soft, about 5 minutes.
- Add Dei Fratelli Diced Tomatoes, beans, vinegar, and dry spices. Bring to a simmer. Simmer until liquid is reduced by half, about 10-15 minutes.
- In a separate pan, sauté olives over medium-high heat until browned, about 6-7 minutes. Serve beans and rice topped with blistered olives.
Chef's Tip:
Substitute red beans for black if desired.
Would go well with grilled shrimp or another type of seafood!
