Could it get any simpler with our Quick and Easy Gazpacho? Combining a #10 Foodservice can of Petite Diced Tomatoes, cucumber, and white onion into a large food processor or blender creates a fresh and tasty Gazpacho that everyone will love.

Ingredients:
- 1 #10 can Petite Diced Tomatoes
- 6 Cups Cucumber, peeled and diced
- 3 Cups Anaheim Pepper, diced
- 1 1/2 Cups White Onion, diced
- 1 1/2 Cups Water
- 3/4 Cup Red Wine Vinegar
- 3/4 Cup Extra Virgin Olive Oil
- 1 Tbsp. Sea Salt
- 1 Tbsp. Garlic, minced
- 1 1/2 tsp. Sugar
- 3/4 tsp. Granulated Onion
- 3/4 tsp. Granulated Garlic
Instructions:
- Combine all ingredients in a large food processor or blender and pulse down until pieces are uniform and between 1/4" to 3/8" in size.
Chef's Tip:
Serve this summer treat with some tortilla chips or fresh-cut veggies.
