Minestrone Soup

You cannot go wrong with this classic Minestrone Soup. To recreate this iconic soup, add a Foodservice can of Dei Fratelli Diced Tomatoes, white onions, and carrots into a pot. After you are done, you will taste why this delicious soup is considered to be such a classic. With 24 servings, everyone will be able to enjoy it!

Ingredients:
- 1 #10 can Diced Tomatoes
- 1 head Garlic, peeled and sliced
- 4 Cups White Onion, medium diced
- 2 Cups Celery, medium diced
- 2 Cups Carrot, peeled and medium diced
- 1 gallon Vegetable Stock
- 4 (15 oz.) cans Cannellini Beans, drained and rinsed
- 2 Tbsp. Sea Salt
- 1 Tbsp. + 1 tsp. Garlic, minced
- 1 Tbsp. + 1 tsp. Lemon Juice
- 2 tsp. Oregano, dried
- 2 tsp. Basil, dried
- 2 tsp. Black pepper
- 12 Cups Kale, chopped small
- 8 Cups Orzo Pasta, cooked
Instructions:
- In a large stockpot, toast sliced garlic over medium heat until light brown. Remove and set aside.
- Add onion, celery, and carrot to pot and cook over medium-high heat until soft, about 10 minutes, stirring occasionally.
- Add remaining ingredients, except kale and sliced garlic, to pot. Reduce heat and simmer for 10 minutes.
- Add kale and sliced garlic and continue simmering another 5 minutes, or until kale has wilted.
- Serve over orzo pasta.
Chef's Tip:
Garnish with fresh, chopped parsley.
