Nuovo Minestrone
Ingredients:
- 1 (28 oz.) can Dei Fratelli Crushed Tomatoes with Basil & Herbs
- 1 (8 oz.) can Dei Fratelli Tomato Sauce
- 1 lb. Hot Italian Sausage, ground
- 1 Cup Red Onion, chopped
- 2 tsp. Garlic, minced
- 1/2 Cup Red Wine
- 4 Cups Beef Broth
- 1 (14 oz.) can Cannellini Beans, drained and rinsed
- 1/2 tsp. Oregano, dried
- 1 (8 oz.) package Cheese Tortellini
- 3 Cups Fresh Spinach
- 3 Tbsp. Fresh Basil Leaves, chopped, for garnish
- Parmesan Cheese, for garnish
Instructions:
- In a large pan, cook sausage over medium heat until browned, about 8 minutes. Remove sausage and drain grease, leaving about 1 Tbsp. in the pan.
- Add onion and garlic and sauté for 3 minutes, or until pan is almost dry.
- Stir in the beef broth red wine, Dei Fratelli Crushed Tomatoes with Basil & Herbs, Dei Fratelli Tomato Sauce, beans, oregano, and cooked sausage. Bring to a boil.
- Reduce heat and simmer uncovered for 30 minutes, stirring occasionally. Skim fat from the soup, cover, and simmer for an additional 20 minutes.
- Add tortellini and continue to simmer for another 10 minutes. Fold in spinach and allow to wilt, about 2 minutes. Garnish with basil and parmesan cheese.
