Thai Fried Rice

With the inclusion of fresh pineapple, this Thai Fried Rice will have everyone wanting more! A #10 can of Dei Fratelli Petite Diced Tomatoes, fresh pineapple, and brown rice creates a tasty Foodservice side dish that goes well with fish or chicken!

Ingredients:
- 1 #10 can Petite Diced Tomatoes, drained
- 1/2 Cup Scallions, sliced
- 2 Tbsp. + 2 tsp. Shallots, minced
- 1 Tbsp. + 1 tsp. Garlic, minced
- 4 Cups Fresh Pineapple, medium diced
- 1 Gallon Brown Rice, cooked and cooled
- 1/2 Cup Red Bell Pepper, medium diced
- 1 Cup Soy Sauce
- 1/2 Cup Lime Juice
- 1/2 Cup Chili Garlic Sauce
- 1 tsp. Sesame Oil
- 1/4 Cup Cilantro, chopped
Instructions:
- Over medium-high heat, cook scallions, shallots, and garlic in a large wok until softened, about 3-5 minutes. Add pineapple and continue cooking another 5 minutes, or until slightly browned.
- Add Dei Fratelli Petite Diced Tomatoes, cooked rice, and red pepper and cook another 5-7 minutes, or until rice is browned.
- Add soy sauce, lime juice, and chili garlic sauce. Combine well and cook for 2 minutes, stirring continuously.
- Finish with a drizzle of sesame oil and heat for 1 minute. Garnish with chopped cilantro.
Chef's Tip:
Serve as a side with fish or chicken.
