With the inclusion of fresh pineapple, this Thai Fried Rice will have everyone wanting more! A #10 can of Dei Fratelli Petite Diced Tomatoes, fresh pineapple, and brown rice creates a tasty Foodservice side dish that goes well with fish or chicken!

Ingredients:

  • 1 #10 can Petite Diced Tomatoes, drained
  • 1/2 Cup Scallions, sliced
  • 2 Tbsp. + 2 tsp. Shallots, minced
  • 1 Tbsp. + 1 tsp. Garlic, minced
  • 4 Cups Fresh Pineapple, medium diced
  • 1 Gallon Brown Rice, cooked and cooled
  • 1/2 Cup Red Bell Pepper, medium diced
  • 1 Cup Soy Sauce
  • 1/2 Cup Lime Juice
  • 1/2 Cup Chili Garlic Sauce
  • 1 tsp. Sesame Oil
  • 1/4 Cup Cilantro, chopped

Instructions:

  • Over medium-high heat, cook scallions, shallots, and garlic in a large wok until softened, about 3-5 minutes. Add pineapple and continue cooking another 5 minutes, or until slightly browned.
  • Add Dei Fratelli Petite Diced Tomatoes, cooked rice, and red pepper and cook another 5-7 minutes, or until rice is browned.
  • Add soy sauce, lime juice, and chili garlic sauce. Combine well and cook for 2 minutes, stirring continuously.
  • Finish with a drizzle of sesame oil and heat for 1 minute. Garnish with chopped cilantro.

Chef's Tip:

Serve as a side with fish or chicken.
