Tomato Glazed Carrots
Ingredients:
- 1 (15 oz.) can Dei Fratelli Tomato Sauce
- 1 Cup Light Brown Sugar
- 1 1/2 Cups Water, divided
- 2 tsp. Granulated Onion
- 1/4 tsp. Nutmeg, ground
- 1/4 tsp. Ginger, ground
- 2 Tbsp. Vegetable Oil
- 4 Cups Carrot Chips
- 1 Cup Sugar Snap Peas, boiled for 3 minutes
Instructions:
- For the glaze, combine brown sugar and 1/2 cup water together in a small saucepan. Bring to a simmer over medium heat until the sugar has melted and formed a thin, brown syrup. Cook for 10 minutes.
- Add Dei Fratelli Tomato Sauce, onion, nutmeg, and ginger. Cook for an additional 10 minutes over medium heat, stirring frequently. The glaze should look sticky and evenly coat the back of a spoon.
- In a large sauté pan, heat oil over high heat. Add carrots and snap peas and sauté for 4 minutes, stirring throughout. Carefully add remaining water and allow it to fully evaporate. Add glaze, mix well, and sauté for 1 additional minute.
