Turkey Taco Lasagna
Ingredients:
- 1 (16 oz.) jar Dei Fratelli Our Original Salsa Medium
- 1 (14.5 oz.) can Dei Fratelli Stewed Tomatoes, roughly chopped
- 2 Cups Turkey, cooked and diced
- 1 (1 oz.) packet Taco Seasoning
- 1/2 Cup Corn, drained and rinsed
- 1/2 Cup Black Beans, drained and rinsed
- 6 large Flour Tortillas
- 2 Cup Queso Fresco , crumbled
- 1 1/2 Cups Monterery Jack Cheese, shredded
- 1/2 Cup Colby Jack Cheese, shredded
- Nonstick Cooking Spray, as needed
Instructions:
- Preheat oven to 375 F.
- Place Dei Fratelli Our Original Salsa Medium, Dei Fratelli Stewed Tomatoes, turkey, taco seasoning, corn, and black beans in a large sauté pan. Stir to combine well and bring to a simmer for 10-15 minutes.
- Grease a 9×13 baking dish with nonstick spray. Use 2 tortillas to layer the bottom of the dish. Spread 2/3 cup of queso fresco evenly over the tortillas, followed by 1/3 of the turkey mixture.
- Mix together Monterey jack and colby jack cheeses. Take 2/3 cup of the mixture and sprinkle on top of the turkey.
- Repeat all layers 2 more times, starting with tortillas, until you have 3 sets of layers total. Place in oven and bake for 25 minutes. Allow to cool for 10 minutes before slicing and serving.
