Spinach Dip
Ingredients:
- 1 (14.5 oz.) can Dei Fratelli Petite Diced Tomatoes with Onion, Celery, & Peppers, drained
- 1 (8 oz.) package Light Cream Cheese
- 1 (4.5 oz.) package Goat Cheese
- 1 Cup Parmesan Cheese, grated
- 1 (10 oz.) package Fresh Baby Spinach, roughly chopped
- Salt, to taste
- Black Pepper, to taste
Instructions:
- In a large saucepan, add cream cheese and goat cheese. Melt for 5 minutes over medium-low heat, or until cheese can be easily mixed together.
- Add Dei Fratelli Petite Diced Tomatoes with Onion, Celery & Peppers and parmesan. Continue mixing another 5 minutes, mixing continuously.
- Gradually add spinach and continue cooking another 15 minutes, or until spinach is completely wilted, stirring continuously. Add salt and pepper to taste.
