These Sauerkraut Hashbrowns are crispy, savory, and made in one skillet with peppers, sausage, or any of your favorite breakfast mix-ins. A quick breakfast or brunch side.

Ingredients:

  • 1 (14 oz.) can Silver Fleece Sauerkraut, drained
  • 2 Cups Shredded Potatoes, frozen
  • 1 Onion, sliced
  • 0.5 Cup Sliced Sausage, or favorite breakfast protein, if desired
  • 1 Red Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • Cooking Oil, as needed

Instructions:

  • Drain Silver Fleece Sauerkraut and mix with frozen potatoes, sliced onion, peppers, and sausage (or other desired breakfast protein).
  • Put oil in a pan, just enough to cover the bottom and begin warming the oil on the stovetop.
  • Once the oil is heated, add in the hashbrowns and cook until crispy, about 10 minutes.

Chef's Tip:

Do I need to rinse sauerkraut before using it?
Draining the sauerkraut is recommended. Rinsing is optional and can be done if you prefer a milder tang.
What meat works best in sauerkraut hashbrowns?
Diced ham, bacon, or sausage all work well and add savory flavor, but the recipe can also be made meatless.
