Fuczki are savory sauerkraut pancakes made with kale, flour, and eggs and pan-fried until golden brown. An easy Eastern European comfort recipe.

Ingredients:

  • 1 (14 oz.) can Silver Fleece Sauerkraut
  • 1/2 bunch Kale
  • 1/2 Cup All Purpose Flour
  • 2 Eggs
  • 1/4 Cup Sliced Sausage, can substitute with ham, bacon, or other favorite breakfast protein, if desired
  • Cooking Oil, as needed

Instructions:

  • Remove the stems from your kale and chop the leaves up to desired size.
  • Mix kale leaves with Silver Fleece Sauerkraut. Cover your bowl and let it sit in the fridge overnight.
  • Mix the flour, eggs, and sliced sausage together and add to the kale and sauerkraut mixture. You can substitute the sausage for any of your other favorite breakfast proteins too! If the mixture is not holding together or is too thin, add more flour gradually until it is a similar consistency to regular pancake batter.
  • Heat cooking oil in a pan over medium heat.
  • Scoop out 1/4 cup of the mixture and place in the hot oil. Let the pancake cook until golden brown edges form. Flip the pancake and let the other side crisp up too!
  • Once the pancake is cooked, transfer to a clean plate and continue making more pancakes until the batter is completely gone.

Chef's Tip:

What are Fuczki?
Fuczki are savory pancakes made with sauerkraut, flour, and eggs. They are traditionally pan-fried until golden brown and served as a comforting Eastern European dish.
Can Fuczki be made vegetarian?
Yes. Simply omit the sausage or bacon. The flour, eggs, kale, and sauerkraut create a flavorful vegetarian savory pancake.
How do you keep the sauerkraut pancakes crispy?
Cook in hot oil and avoid overcrowding the pan. Let the pancakes cook undisturbed before flipping to develop a golden crust. When reheating, instead of microwaving, reheat oil in the skillet and heat the pancakes that way to retain crispness.
