Easy, tasty, and a great way to sneak in some veggies, our Stuffed Zucchini is the perfect meal for an easy dinner night! Made with Dei Fratelli Gluten-Free Tomato Soup, ground beef, and mozzarella cheese, these tasty zucchini boats are perfect for the whole family!
Cut zucchini in half lengthwise. Scoop out some of the flesh of the zucchini to make boats. Place the insides of the zucchini into a separate bowl to save for the next step. Set zucchini boats aside.
In a large skillet, heat oil over medium heat. Add ground beef and insides of zucchini and cook until the beef is browned, about 8-10 minutes. Season with salt and pepper.
Place zucchini boats in a large baking dish. Fill each boat with the meat mixture. Top with Dei Fratelli Gluten-Free Tomato Soup and bake for 30 minutes.
Remove zucchini boats from the oven and top with mozzarella cheese. Return to the oven and continue baking for another 10 minutes.
