3-2-1 Cookies

These quick and easy 3-2-1 Cookies are just waiting to be baked! Dei Fratelli Stewed Tomatoes top a mix of flour, sugar, and butter to create a perfect way to enjoy our tomatoes, even for dessert.
Ingredients:
For Sticky Sweet Tomatoes:
- 1 (28 oz.) can Dei Fratelli Stewed Tomatoes, drained and reserved juice
- 1 Cup Maple Syrup
- 1 tsp. Balsamic Vinegar
For 3-2-1 Cookies:
- 1/2 Cup Sticky Sweet Tomatoes Recipe
- 1 Cup Butter
- 1/2 Cup Sugar
- 1 1/2 Cup Flour
Instructions:
- Preheat oven to 350 F.
- In a stand mixer, beat butter on high until fluffy, about 3 minutes. Add sugar and continue to beat until well combined, about another 2 minutes. Turn to low speed and slowly add the flour. Continue mixing until a dough is formed, about 2 more minutes.
- Turn out dough onto a non-greased 9×9 baking pan. Evenly distribute dough throughout the entire pan. Place in oven and bake for 25-30 minutes, or until golden brown.
- Immediately fill each “thumbprint” with Sticky Sweet Tomatoes. Let cool completely before serving.
Chef's Tip:
Makes an excellent holiday cookie for decorating as well!
