Patriotic Picnic Potatoes
Add some flair to your 4th of July celebrations with Patriotic Picnic Potatoes! Red Dei Fratelli Chopped Italian Tomatoes, blue cheese, and bacon create a colorful side to share at your family festivities.

Ingredients
- 1 (28 oz.) can Dei Fratelli Chopped Italian Tomatoes drained
- 4 Slices Bacon
- 2 lbs. Red Potatoes
- 1 Bunch Chives sliced
- 3 Tbsp. White Vinegar
- 2 Tbsp. Vegetable Oil
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 1/2 Cup Blue Cheese crumbled
Instructions
- In a large skillet, cook bacon over medium-high heat until crispy, about 10 minutes. Drain grease, crumble, and set aside.
- While bacon is cooking, bring a pot of water to a boil. Add potatoes and cook until tender, about 15-20 minutes. Drain, cool, and dice into bite-sized pieces.
- In a large bowl, mix together Dei Fratelli Chopped Italian Tomatoes, chives, vinegar, oil, salt, and pepper. Gently fold in cooked potatoes, crumbled bacon, and blue cheese.
Notes
If you do not have blue cheese on hand substitute with feta cheese for a Mediterranean twist.
