Mediterranean Chickpea Salad
This protein-packed salad is made with Dei Fratelli Low Sodium Diced Tomatoes, chickpeas, feta cheese, mint, and parsley for a flavorful Mediterranean Chickpea Salad.

Ingredients
- 1 (14.5 oz.) can Dei Fratelli Low Sodium Diced Tomatoes
- 2 (14.5 oz.) cans Chickpeas drained and rinsed
- 1/2 Cup Feta Cheese crumbled
- 1/2 Cup Kalamata Olives roughly chopped
- 1/4 Cup Parsley chopped
- 1/4 Cup Fresh Mint chopped
- 6 Tbsp. Extra Virgin Olive Oil
- 3 Tbsp. Red Wine Vinegar
- Salt to taste
- Black Pepper to taste
Instructions
- Combine all ingredients in a large mixing bowl and chill for 30 minutes before serving.
Notes
Serve as is or mix with crunchy romaine lettuce for extra flavor.
