This protein-packed salad is made with Dei Fratelli Low Sodium Diced Tomatoes, chickpeas, feta cheese, mint, and parsley for a flavorful Mediterranean Chickpea Salad.

Ingredients:

  • 1 (14.5 oz.) can Dei Fratelli Low Sodium Diced Tomatoes
  • 2 (14.5 oz.) cans Chickpeas, drained and rinsed
  • 1/2 Cup Feta Cheese, crumbled
  • 1/2 Cup Kalamata Olives, roughly chopped
  • 1/4 Cup Parsley, chopped
  • 1/4 Cup Fresh Mint, chopped
  • 6 Tbsp. Extra Virgin Olive Oil
  • 3 Tbsp. Red Wine Vinegar
  • Salt, to taste
  • Black Pepper, to taste

Instructions:

  • Combine all ingredients in a large mixing bowl and chill for 30 minutes before serving.
